You'll Need:
6 sole filets (other fish filets may be used)
olive oil (just enough to brown the fish)
1/4 cup soy sauce
6 tbs dry sherry
1/4 cup chopped scallions
1/2 tsp ground ginger
1/2 cup chicken broth
ground black pepper to taste
Procedures :
Brown filets in hot olive oil. Mix together remaining ingredients and pour over filets. Cook gently until fish is fork tender (about 10 minutes).
